The Albillo varietal is a white wine grape variety indigenous to central and southern Spain. It produces high-quality white wines known for their richness, complexity, and aromatic qualities. The grapes themselves are often small and yield a low quantity of juice, making wines from this varietal somewhat rare.
The wines produced from the Albillo grape tend to be full-bodied with refreshing citrus flavours and floral scents. Some may show subtle hints of herbs and mineral, reflecting the terroir where they grow, and often possess a desirable level of natural acidity. They may also display a distinctive, rich gold color due to the grape's particular pigmentation.
Although traditionally used for blending, this varietal is now often vinified on its own to create single-varietal wines, predominantly in the regions of Madrid and Ribera del Duero. In addition to Spain, the grape is also grown on a smaller scale in Portugal. It is used in making still, sparkling, and even sweet dessert wines.
