Sauvignon Blanc is a green-skinned grape varietal that originates from the Bordeaux region of France. The grape is also popular in other wine regions such as the Loire Valley, New Zealand, California, and northeast Italy.
The flavor of Sauvignon Blanc can vary greatly depending on the climate where it is grown. It typically exhibits a crisp, dry, and refreshing taste with high acidity. In cooler climates, the grape tends to produce wines with noticeable acidity and green flavors like grass, green bell peppers and nettles with some tropical fruit such as passion fruit.
In warmer climates, it can develop more tropical fruit notes but risk losing a lot of aromatic intensity from over-ripeness, with a risk of tasting flabby (lacking acidity). Its flavor can sometimes be grassy or herbaceous, while in cooler climates it can have more of a zesty, citrus-like quality.
It's often consumed young, as its flavors tend to diminish with time and not gain the depth of other white varietals like Chardonnay as they age. Some styles are fermented in oak to enhance richness and complexity.
In addition to standalone varietal wines, Sauvignon Blanc is often blended with Semillon, especially in Bordeaux, where the blend is also used to make the sweet wines of Sauternes.
