The wine is produced using a very specific method called Cacc'e mmitte, which is where its name originates from. This special vinification process involves a communal or shared wine press, where grape growers would bring their crop and have to complete the fermentation and extraction process all at once and promptly remove their must in order to make room for the next person's grapes. Hence, the name 'pour and leave'. This tradition is not really practiced in the present days, but the name remains.
