Suavignon Blanc

Sauvignon Blanc is a green-skinned grape varietal that originated from the Bordeaux region of France. It is now grown and produced all over the world, with notable regions including New Zealand, Chile, South Africa, and California.

The wine produced from Sauvignon Blanc is typically dry and crisp with high acidity. Its flavor profile can range from herbaceous and green vegetal notes to tropical fruit flavors depending on the climate it's grown in. In cooler climates, it tends to exhibit flavors of green bell pepper, gooseberry, and grass, while in warmer climates, it may taste of passionfruit, melon, or grapefruit.

Some Sauvignon Blanc wines also undergo a process called malolactic fermentation, which softens the wine and can introduce creamy, buttery flavors to contrast with the stark acidity.

Sauvignon Blanc is also commonly used in dessert wines, especially those from the Sauternes region of France, where the grapes are affected by a fungus called noble rot that concentrates their sugars.

When paired with food, Sauvignon Blanc shines when served with fresh herbs, green vegetables, and lighter fish and poultry dishes. It also goes well with goat's cheese and it is exceptionally refreshing on its own as an aperitif.
