Savagnin is a white wine grape variety that traces its origin back to the eastern France region of Jura. The varietal is particularly versatile and is known for producing a wide range of wine styles from sweet to dry, including the region's distinctive Vin Jaune.
The grape typically produces wines that are high in acidity, making it perfect for ageing. Savagnin wines often exhibit complex and unique flavors encompassing notes of citrus, nuts, and spices, along with an aromatic profile that may include scents like green apple, honey, and ginger.
This varietal can be made in a variety of styles, and it is traditionally allowed to age sous voile, or "under a veil" of yeast, which affords it a unique oxidative characteristic and a rich, deep character.
Savagnin is a particularly hardy variety, able to resist winter frost and disease, but it is relatively low-yielding, which can make its wines more limited and prized.
While most closely associated with Jura, France, Savagnin is also grown in other pockets around the world, including Australia, where it is sometimes mistaken for the AlbariƱo varietal, and Switzerland, where it is used to make traditional Swiss white wines.
