Ribolla is an ancient white grape varietal that is primarily grown in the Friuli-Venezia Giulia region of northeast Italy and also in Slovenia. It is famous for producing dry, full-bodied white wines with high acidity and floral aromas. The wines derived from Ribolla grapes often have flavors of tart green apples, apricots, and almonds, with a slightly mineral finish. These wines are typically fermented and aged in stainless steel tanks, but some winemakers opt to age them in oak barrels to add complexity. They are usually best consumed within a few years of bottling.
