Edelweiss is a white wine grape varietal primarily grown in the United States, particularly in the Midwest and South. It is a hybrid variety created by crossing Minnesota's hardy wild grapes with the Vitis Vinifera species (common for wine making).
The Edelweiss varietal was designed to thrive in colder climates and possesses a high level of disease resistance. The grapes from this varietal are often used to produce sweet and semi-sweet wines which showcase floral, fruity (golden apple, pear, citrus) and honeyed notes.
Because it maintains high levels of sugar even in cooler climates, the Edelweiss varietal is perfect for creating ice wines and late-harvest dessert wines. Wines made from the Edelweiss grape are typically enjoyed young, and are not known for their aging potential.
