Aurore

Aurore is a white grape variety that was first developed in New York in the mid-20th century. It is a hybrid grape, and is believed to be a cross between American grape species and European wine grape species.

The Aurore varietal is known for its early ripening and is often one of the first grapes to be harvested in a season. It has a high yield and is quite resistant to cold temperatures, making it a popular choice in cooler wine regions.

In terms of flavor, Aurore grapes produce wine that is light and somewhat neutral in taste. It often presents with subtle fruit flavors such as apple, pear, and citrus. Due to its rather neutral flavor profile, it is often used in blends or as a base for sparkling wines.

However, the grape is quite versatile, and can also produce sweeter, dessert-style wines when left to ripen longer on the vine. It is often used in producing white table wines, sparkling wines, and sweet or ice wines.
