Assyrtiko is a white grape varietal originally from the island of Santorini, Greece. It is considered one of the finest white grape varieties in Greece, known for its ability to maintain its acidity as it ripens.
Assyrtiko grapes produce dry, full-bodied white wines with high acidity. They tend to have distinct mineral and citrus flavors, with notes of lemon, grapefruit, and sometimes a smoky, flinty or salty character, largely due to the volcanic soils of Santorini where they typically grow.
The wines made from Assyrtiko are very versatile and can range from fresh and crisp to rich and textured, especially when oak-aged. They are good for ageing and some versions can develop complex, nutty flavors over time.
In addition to Santorini, Assyrtiko is also grown in other regions of Greece and has been recently planted in Australia where it has had some success.
