Erbaluce di Caluso or Caluso is an Italian white wine that is named after the Erbaluce grape from which it is made. The wine is cultivated in the region of Piemonte in Italy, specifically in the areas surrounding the town of Caluso.
Erbaluce di Caluso is granted the DOCG (Denominazione di Origine Controllata e Garantita), which is the highest recognition for quality in Italian wines. This means that the wine has to meet stringent criteria in terms of the production area, the grape varieties used, maximum yields, winemaking procedures, and organoleptic (flavor, color, smell) characteristics.
The Erbaluce grape gives the wine a unique acidic profile which balances with its natural sugars. The wine has a straw-yellow color, and is usually high in acidity. It can have a range of flavor notes from fruity and floral when it’s young, developing more complex, honeyed, golden apple and sweet toasty flavors as it ages.
In addition to being made into a dry still wine, the Erbaluce grape is also used to make sparkling (both Metodo Classico and Charmat method) and sweet passito wines. The sweet passito wine, often labeled as Caluso Passito, is produced from grapes that have been partially dried to concentrate their juice.
Erbaluce di Caluso is best paired with fish and seafood, chicken, pork, light appetizers, and creamy pasta dishes. The sweet version makes a good match with desserts and cheese.
