Est! Est!! Est!!! di Montefiascone is an Italian white wine produced in the areas around Montefiascone, a town situated in Lazio, Italy. The unusual name originates from a story of a 12th-century bishop. While traveling to the Vatican, his advance servant, who was instructed to mark the doors of inns with "Est" (Latin for "it is") to indicate the wine was good enough for the bishop, was highly impressed with the wine at Montefiascone and marked the inn door with "Est! Est!! Est!!!".
The production zone for Est! Est!! Est!!! di Montefiascone wine is in the volcanic hills surrounding Montefiascone near Lake Bolsena. The wines are typically blends with a significant inclusion of Trebbiano, a popular white grape variety in Italy. Other grapes such as Rossetto and Malvasia are also often used.
The wine is generally dry to semi-sweet and often has a light, slightly bitter finish. It exhibits light floral and fruit notes with low acidity. Typically, it is consumed young, but few premium bottles can benefit from short-term aging.
