Graves Supérieures is an appellation within the larger Graves region in Bordeaux, France. This specific sub-region is recognized for its sweet white wines, which are produced from Sémillon, Sauvignon Blanc, and Muscadelle grapes. In order to qualify as Graves Supérieures, the wine must have a higher sugar content compared to other wines from the Graves region.
The unique characteristic of Graves Supérieures wines comes from the production process known as “noble rot” or "botrytis cinerea". This is a type of fungus that shrivels and decays wine grapes, resulting in a higher concentration of sugar which gives the wine its signature sweet flavor.
Besides its sweetness, Graves Supérieures wines are also known for their aromas and flavors of honey, apricot, and acacia. These wines can be enjoyed on their own as a dessert or paired with a variety of dishes, particularly foie gras and blue cheeses.
It’s also important to note that Graves Supérieures is located within the larger Sauternes region and thus its winemaking techniques and wine styles bear some similarities to the region's prestigious sweet wines. However, while the wines of Sauternes are revered for their complexity and ageing potential, Graves Supérieures wines are often noted for their freshness and youthfulness.
