Foch is a dark-skinned grape variety known for creating deep red wines. Developed in France, it is a hybrid grape named after Ferdinand Foch, a French World War I general. Wines made from the Foch grape tend to have a medium body with berry aromas, typically blackberry and cherry, and can exhibit earthy or smoky notes. Flavors can range from tart to richly fruity. Depending on winemaking techniques, Foch wine can retain a bit of its natural grapey profile, or it can be coaxed into a style resembling more traditional European reds. It’s often used in blends but can also make a delightful wine on its own. Cultivation is most common in cooler climates like the American Pacific Northwest, New York, and Canada.
