Carmenere, originally from Bordeaux, is now largely grown and associated with Chile. It is a dark-skinned red grape varietal that creates wines with deep red colors and a rich, velvety texture. Carmenere is characterized by its medium acidity and tannins, with flavors of ripe dark fruits, and notes of spices and earthy undertones. Green bell pepper notes can also be detected, as can a unique smoky flavor. This wine varietal pairs well with hearty meats, stews and spicy dishes. The grape enjoys the long growing season in Chile which allows it to fully mature and develop complex flavors.
